San Diego’s culinary landscape is evolving, with Liberty Public Market emerging as a hub for innovative and viral food trends. The market has become a playground for chefs experimenting with fusion cuisines and unique presentations, capturing the attention of food enthusiasts and social media users alike.
The market’s latest sensations are a testament to the power of social media in shaping modern food culture. Two standout creations, the sushi push pop and the crab Rangoon burrito, have not only drawn long lines but also put San Diego on the map for culinary innovation.
The Rise of the Sushi Push Pop
The sushi push pop originally created by Suka Sushi in New York City, has made its way to the West Coast. This ingenious creation consists of a sushi roll encased in a tube, complete with a smaller tube of soy sauce. The unique design allows diners to enjoy sushi on the go, pushing the roll out of the tube and drizzling it with soy sauce as they please.
The concept, which gained traction in late 2026, has found a new home at The Sushi Stand within Liberty Public Market. Here, it is offered in five different flavors, catering to a variety of tastes. The sushi push pop exemplifies how traditional dishes can be reinvented to suit modern lifestyles, making them more accessible and convenient.
The Crab Rangoon Burrito Phenomenon
Another viral sensation hailing from Liberty Public Market is the crab Rangoon burrito a brainchild of Slurp Thai Street Food. This fusion dish combines the crispy, cheesy goodness of crab Rangoon with the hearty convenience of a burrito. The creation, spearheaded by co-owner Bella Kim, has become a social media darling, with customers flocking to capture and share its golden crunch and delectable interior.
Gene Kim, co-owner of Slurp Thai Street Food and Bella Kim’s husband, shared their surprise at the dish’s popularity. “We always knew about social media and how powerful it could be,” he said, “but we didn’t expect the way it took off from June of last year.” The crab Rangoon burrito has not only changed their business but also sparked a wave of experimentation with traditional recipes, making them more approachable for new and existing customers.
Innovation and Adaptation
Young Kim, owner of BOPJO also at Liberty Public Market, echoes the sentiment of innovation. BOPJO is known for its unique take on Korean-Mexican cuisine, offering specialties like the California Burrito and Korean-Mexican bowls. “Let’s create something that’s gonna be unique,” Young Kim said, emphasizing the importance of standing out in the fast-paced food business.
Young Kim believes that San Diego’s culinary scene is somewhat underappreciated but has the potential to gain more recognition. “You always have to be changing things up so that you bring in new customers,” he noted, highlighting the role of social media in driving this change. He hopes that in the coming years, San Diego’s cuisines will become more popular, especially at Liberty Public Market.
The market’s success stories are a testament to the power of innovation and adaptation. As chefs continue to push boundaries and experiment with new flavors and presentations, Liberty Public Market is poised to become a culinary destination that resonates with both locals and visitors alike.
